Grain Free Crackers with Guacamole, GAPS/Paleo/Egg Free
Serves 10 as a snack
2 cups almond meal/ about 210g
2 Tbsp tallow, coconut oil or butter
2 Tbsp chia seeds, ground (if possible)
combined with 4 Tbsp water (80mL) water,
set aside to gel for 5min before using
optional: add 2 tsp honey to make a sweet cracker
Guacamole:
1 large avocado
Juice of 1 lime
1 tomato, diced
Salt to taste
optional but delicious: 1 drop food grade cilantro essential oil
Method:
- Combine all cracker ingredients in a large bowl or food processor, mixing until well incorporated and it comes together as a ball. 
- If it's hot, wrap the dough and cool in the fridge or freezer for 15-20min. 
- Preheat the oven to 150C. 
- When cool enough to handle (not too sticky), place on a piece of baking paper and roll into a large rectangle shape to cover the size of your baking tray. 
- Use a knife to cut the dough into long rectangles, then squares, then diamonds or your desired shape. You can sprinkle on salt, poppy seeds, sesame seeds or herbs before baking. 
- Bake for 15-25 minutes. You might need to turn the tray around half way though. 
- Allow to cool on the tray and gently with your knife or fingers encourage the crackers to break along the cut lines. 
- To make the guacamole mix/roughly mash all the guac ingredients in a small bowl. 
- Serve straight away with guacamole or store airtight in a small container (less airflow). They will soften over time. 
Nut Free omit almond meal and replace 1:1 with ground tigernuts or buckwheat flour.
Tigernuts are actually a small tuber (vegetable), not a nut. You can buy them in health food section of supermarkets. They have a neutral flavour and nutty texture
You can swap the chia egg (seeds+water) for 2 eggs, lightly whisked, if desired
